Hot Sauce Blog

Hello. I'm new to the extreme hot sauces, and i bought a couple of bottles for laughs amongst my friends and me. I just recieved Black Mamba & Mongoose. Supposedly Black Mamba is rated at 2,000,000-2,500,000 scoville and Mongoose 2,500,000-3,000,000 scoville. After trying both, the Mamba seems to be hotter than Mongoose, (even though mongoose is supposed to be rated higher), but Mongoose seems to stay hotter in my mouth for longer periods of time. Interestingly, my 'Possible Side Effects' hot sauce rated at a mere 283,000 scovilles seems to be hotter than both Mamba & Mongoose. Does this seem accurate? I only sampled a drop of each sauce. Are these results consistent or should I do more quantity wise(I dont want to get sick). Also, I'm thinking of purchasing the source, is that much hotter than the 3 brands I have or would it be a waste of money?

Hey Jay, the HPLC testing used to rate the heat level is very accurate, but that wont account for the sensitivity of the tongue. Different peppers will affect different areas of the mouth. Jalapenos always get me on the right rear of my tongue while habaneros burn the throat. There are also different kinds of extracts. I have eaten both the Mamba and Mongoose and I agree that the Mamba seemed hotter. Also, I dont have any Source, but from what I have read, its pure extract and is meant as an additive and not to be eaten straight. I get my capsicum from Citrus and Allied and if you want to read up on different extracts, a good site is www.trilogyspice.com. I hope this helps, Xero
When purchasing extract, do look more for type or straight heat? I am new here if course and just started making my own sauce. Pretty straight style, reconstituted habaneroes fresh fruit for flavor vinegar and seasoning and blend till smooth. Any tips for a newb?
